A turkey dinner runs on the bird’s schedule, and the bird runs on its weight. This calculator looks up roasting time in the USDA Food Safety and Inspection Service timetable for a 325 °F oven, adjusts for stuffing and for roasting from frozen, and works backward from your dinner time so you know when it needs to go in the oven. It also lists thawing times and the safe temperatures to check.
How to use the turkey cooking time calculator
- Enter the turkey weight in pounds or kilograms, from the label.
- Choose unstuffed or stuffed.
- Tick roasting straight from frozen if the bird has not been thawed.
- Optionally enter a dinner time; the calculator gives the latest time to put the turkey in and when to start checking the temperature.
- Optionally enter the number of guests to check that the bird is big enough.
USDA turkey roasting timetable
Times for a fresh or fully thawed turkey in a conventional oven set to 325 °F:
| Weight | Unstuffed | Stuffed |
|---|---|---|
| 4–8 lb (breast) | 1½ – 3¼ hours | 2½ – 3½ hours (6–8 lb) |
| 8–12 lb | 2¾ – 3 hours | 3 – 3½ hours |
| 12–14 lb | 3 – 3¾ hours | 3½ – 4 hours |
| 14–18 lb | 3¾ – 4¼ hours | 4 – 4¼ hours |
| 18–20 lb | 4¼ – 4½ hours | 4¼ – 4¾ hours |
| 20–24 lb | 4½ – 5 hours | 4¾ – 5¼ hours |
Above 24 lb the calculator extends the range by 10–15 minutes per extra pound and says so; rely on the thermometer for very large birds.
How the plan is worked out
From frozen, roasting time is multiplied by 1.5.
Worked example
A 16-lb unstuffed turkey for a 4:00 PM dinner:
USDA band 14–18 lb: 3¾ to 4¼ hours at 325 °F.
Oven-in time: 4:00 PM − 4 h 15 min − 20 min rest = 11:25 AM. Start checking the temperature around 2:40 PM.
Thawing: 16 ÷ 4 = 4 days in the refrigerator (put it in by Sunday for a Thursday dinner), or 8 hours in cold water.
At 1 to 1.5 lb per person, it feeds about 10 to 16 people.
Checking doneness safely
Use an instant-read food thermometer in three places: the thickest part of the breast, the innermost part of the thigh and the innermost part of the wing, avoiding bone. All must read at least 165 °F (74 °C). Pop-up timers can be off, and juice color is not a reliable sign.
USDA safe minimum internal temperatures
| Food | Temperature |
|---|---|
| Poultry, including ground poultry and stuffing | 165 °F (74 °C) |
| Ground beef, pork, veal and lamb | 160 °F (71 °C) |
| Egg dishes | 160 °F (71 °C) |
| Beef, pork, veal and lamb steaks, chops and roasts | 145 °F (63 °C) plus a 3-minute rest |
| Fresh or uncooked smoked ham | 145 °F (63 °C) plus a 3-minute rest |
| Fish and shellfish | 145 °F (63 °C) |
| Leftovers and casseroles | 165 °F (74 °C) |
Stuffing and leftovers
USDA recommends baking stuffing in a separate dish for more even cooking. If you stuff the bird, do it just before roasting, pack it loosely and check that the center of the stuffing reaches 165 °F. Refrigerate leftovers within 2 hours of cooking and use them within 3 to 4 days.

Frequently asked questions
How long does it take to cook a turkey per pound?
In a 325 °F oven, an unstuffed whole turkey takes roughly 13 to 15 minutes per pound in the middle of the USDA range; a 14-lb bird takes about 3 to 3¾ hours. Stuffed birds take longer. Always finish by thermometer, not by the clock.
What temperature should turkey reach?
USDA's safe minimum is 165 °F (74 °C), checked in the thickest part of the breast, the innermost part of the thigh and the innermost part of the wing. Stuffing inside the bird must also reach 165 °F.
How long does it take to thaw a turkey?
In the refrigerator, allow about 24 hours for every 4 to 5 pounds, so a 16-lb turkey needs about 4 days. In cold water, allow 30 minutes per pound and change the water every 30 minutes. Never thaw on the counter.
Can I roast a turkey from frozen?
Yes. USDA says it is safe to cook a turkey straight from frozen, but it takes about 50% longer. Remove the giblet packet with tongs once it loosens partway through, and do not stuff a frozen bird.
How long should a turkey rest?
USDA recommends letting the cooked turkey stand for 20 minutes before removing the stuffing and carving. Resting lets juices settle so the meat is easier to slice.
